FSSAI Technical Officers work at the Food Safety and Standards Authority of India, the apex national food regulator under the Ministry of Health and Family Welfare. Their primary responsibilities include inspection and surveillance of food manufacturing units, testing food samples in laboratories, enforcing the Food Safety and Standards Act 2006, reviewing food labels and import clearances, and guiding businesses on compliance. With India's rapidly expanding processed food industry, FSSAI officers play a critical role in ensuring that the food consumed by 1.4 billion citizens meets safety and quality standards.

The exam consists of 100 MCQs in 120 minutes with no negative marking. Sections include Food Science & Technology (covering food processing, preservation, and quality control), Chemistry & Microbiology (food chemistry, pathogens, contamination), Food Safety Laws & Regulations (FSS Act, CODEX standards, import/export rules), and General Studies. The food science and regulatory sections are the most heavily tested and require candidates to have both theoretical knowledge and practical awareness of food industry processes.

Candidates with B.Sc. or B.Tech degrees in Food Technology, Food Science, Chemistry, Dairy Technology, Biochemistry, or Microbiology are eligible. Some notifications also accept Agriculture graduates with a food technology background. The age limit is typically 21 to 30 years with standard relaxations. Postgraduate qualifications in food science or nutrition, while not mandatory, significantly strengthen a candidate's subject knowledge and may be beneficial during the interview stage.

FSSAI Technical Officers are placed at central government pay Level 6 (approximately Rs. 35,400–1,12,400 per month) with allowances. Career growth leads to Senior Technical Officer, Assistant Director, and Joint Director roles within FSSAI. Officers may be posted at FSSAI headquarters (Delhi), zonal offices, port health offices, and referral laboratories. International exposure through WHO and FAO/CODEX committees is available for senior officers. The regulatory nature of the work involves frequent food industry interactions, making it intellectually stimulating.

Study standard food technology textbooks such as Potter & Hotchkiss for food science, Stanier for microbiology, and Atkins for food chemistry. The FSS Act 2006 and FSSAI regulations must be studied in full—download official documents from the FSSAI website. Understand CODEX Alimentarius standards, HACCP principles, and food labelling laws as these are frequently examined. For General Studies, focus on health policy, government food safety schemes, and India's agri-food export regulations. Practise mock tests to consolidate concepts and improve time management.
